Bass In Paper
Ingredients

4 piece bass (large, fillet)
butter
5 tablespoons lemon juice
1 stick butter (cut in 8ths)
4 piece of medium bay leaf
4 teaspoons thyme
4 sprigs parsley
3 large scallion (finely chopped)
2 large tomatoes (sliced)
pepper
salt

Cooking Instructions

Firstly sprinkle both sides of fillets with salt. Place parchment paper square on work surface and coat with butter. Place one fillet in the center of the square. Sprinkle fish with five teaspoons of lemon juice. Place two pats butter on fish, one bay leaf, one teaspoon thyme, and one sprig parsley. Scatter with scallions and a tomato slices. Repeat with all fillets. Fold paper around as if making a package. Put a toothpick through the folds of the paper to hold it together. Sprinkle packages with water and place them on a cookie sheet and bake in 450 degree oven for twenty minutes.
