| Fried Mussels |
Ingredients
2 tablespoons margarine, melted
juice of 1 lemon
1 glass flour
32 shelled mussels
2 eggs (separated)
olive oil (fro shallow frying)
1 sachet dried yeast
1 teaspoon salt
Cooking Instructions
First wash the mussels , clean off the edges, and dry. In a large mixing bowl, soak the yeast in two tablespoons warm water for ten minutes. Add one glass of the flour, the egg yolks, and melted margarine to the yeast mixture and blend well. Whisk the egg whites with the salt, until quite stiff, later fold into the flour paste. Heat some oil in a skillet. Dip the mussels firstly in the remaining flour, later into the batter, later fry until golden brown. Place in a serving dish lined with paper towels to absorb the excess oil. Drizzle the lemon juice over the mussels and serve.
