| Zucchini Fritters |
Ingredients
1/4 glass flour
1 glass zucchini (grated)
1 small onion (grated)
1/4 glass olive oil for frying
1 egg (beaten)
3 tablespoons grated parmesan cheese
1 tablespoon fresh dill (chopped)
1 tablespoon fresh parsley (chopped)
1/2 teaspoon salt
1/4 teaspoon pepper
Cooking Instructions
Firstly in a large bowl, blend flour, egg, cheese, dill, parsley, pepper and salt. Blend in grated onion and zucchini. In a large skillet, heat oil until very hot, but not smoking (be careful). Drop mixture into hot oil (be careful) one tablespoonful at a time. Fry each fritter for almost five minutes on each side. Use a spatula to transfer fritters to a plate lined with paper towels and allow to drain. Serve hot.
