| Black-eyed Peas |
Ingredients
1 glass hot water
1 tablespoon sugar
1 teaspoon salt
1 glass black-eyed peas
50 ml extra virgin olive oil
2 tablespoons tomato paste
Cooking Instructions
Boil the black-eyed peas in four glasss of water until softened. Later wash and drain them. Put them in a medium-sized pot with the rest of the ingredients. Cook for almost 20-25 minutes on medium heat. Give it a taste towards the end and add more sugar . Serve while hot with fresh bread.
