Apricot Couscous
Ingredients

2 tablespoons pistacchios (peeled)
2 tablespoons almonds (bleached, sliced)
1/2 glass couscous
1 small onion (chopped)
2 tablespoons extra virgin olive oil
1 glass hot water
3 dry apricots (soak the apricots in water overnight, cut in small pieces)
1 teaspoon dry mint
pepper
salt

Cooking Instructions

First saute the onion with olive oil. Add the couscous and saute for two minutes. Add the water, apricots, pepper and salt. Cook for almost ten minutes over medium-low heat. Turn the heat off, cover the lid. Let it rest for twenty minutes and at the end, all the water would evaporate. Toss in the pistacchios, almonds and mint. Stir with a fork and serve while still warm later on. Enjoy.
