Tomato-Rice Soup
Ingredients

1/3 glass rice (short grain)
3 ripe tomatoes (large)
6 glasses beef stock
1 tablespoon butter
1/2 glass parsley (chopped)
pepper
salt

Cooking Instructions

Wash rice and put into the saucepan with grated tomatoes, beef stock, butter, pepper and salt. Bring to boil without the lid on. Cover and simmer until rice is very tender. Garnish with finely chopped parsley and serve hot.
