| Tripe Soup |
Ingredients
1/2 kilo Tripe
2 litre water
4 egg yolks
2 tablespoons flour
1/2 glass vinegar
8 garlic cloves
50 g butter
cayenne
salt
Cooking Instructions
Clean and wash tripe well, add two litres water and cook Flourtil tripe is tender. Chop and put back in stock. Blend very well egg yolks, flour, salt and one glass water, add tripe stock and warm. Put mixture in saucepan, boil four minutes. Mash garlic cloves, blend vinegar. Add mixture in soup, boil. Cook butter and cayenne one minute. Pour soup in bowls, put one tablespoon butter-cayenne mixture each, serve hot.
