| Potato Pie |
Ingredients
3/4 glass sunflower oil
3/4 glass yoghurt
3 eggs
4 medium-sized potatoes (peeled, cut in cubes)
3 onions (chopped)
1 carrot (peeled, cut in cubes)
1/3 glass sweet peas (frozen, soaked in hot water and drained)
1 teaspoon mint
1 teaspoon cumin
1 teaspoon cayenne pepper
1 teaspoon salt
2 glasses flour
13x9x2 oven dish
Cooking Instructions
First whisk the sunflower oil, eggs and yoghurt in a plastic bowl. Add the rest of the ingredients except for the flour, and mix. Slowly add the flour in and knead. Spread equally into the oven dish. Preheat the oven to 200 C. Bake for almost 45 minutes until the top is nicely coloured.
