Mutton Ragout
Ingredients

3 tablespoons margarine
1 kilo mutton
3 large tomatoes
1 teaspoon salt
3 glasses water
35 gibson onions

Cooking Instructions

Skin the tomatoes, remove seeds and chop. Cut meat into egg-sized pieces but do not bone it. Put the meat and the gibson onions into a saucepan, place over medium heat and allow to cook for fifteen minutes, occasionally stirring. Add salt and tomatoes and cook for five minutes. Later add three glasses of hot water, cover and allow to simmer on low heat for two hours. Serve hot.
