| Beef Stuffed Potatoes |
Ingredients
400 g ground beef
8 medium potatoes (peeled)
1 slice white bread (softened in water)
flour (for dredging)
2 medium eggs (beaten)
1 tablespoon olive oil
2 glasses chicken stock
1/2 teaspoon pepper
1 teaspoon salt
Cooking Instructions
First cut potatoes lengthwise into halves and scoop out the pulp leaving a thick wall. Blend beef, bread, pepper and salt together. Fill the potato shells with beef mixture. Dredge them in flour and later dip into the beaten eggs. Heat oil in skillet and brown potatoes over moderate heat for three minutes. Put them in a pan and pour chicken broth over them. Bring to a boil, cover, reduce heat and simmer for half an hour.
