| Artichoke Salad |
Ingredients
artichoke hearts 340 ml in can (washed, drained)
1/4 glass mozzarella cheese (cut in cubes)
1 tomato (cut in bite sizes)
10 mini potatoes (cooked, peeled and cut in halves)
1/4 glass red onion (sliced)
Dressing:
1/2 glass extra virgin olive oil
1+1/2 tablespoon vinegar
2 tablespoons lemon juice
1/2 teaspoon lemon zest
1/2 teaspoon crushed red pepper
1/2 teaspoon oregano
pepper
1 teaspoon salt
Garnish:
8 black olives
Cooking Instructions
First blend the main ingredients in a medium sized bowl. Whisk all the salad dressing ingredients, pour all over and toss. Place in a salad bowl. Garnish with black olives.
