| White Bean Salad |
Ingredients
1 glass white beans (soaked overnight)
1 large red onion (thinly sliced)
1/2 glass olive oil
5 tablespoons red wine vinegar
1 glass parsley (finely chopped)
2 hedium hard-boiled egg (wedged)
black olives
salt
Cooking Instructions
Bring a large pot of water to boil and later add beans and cook until tender almost one hour. Drain and put in a bowl with the onions. Add salt, olive and vinegar. Stir in parsley and let stand one hour. Before serving, decorate with egg and black olives and later serve.
