| Fried Prawn Salad |
Ingredients
1 lime juice
1 lime peel (grated)
3 teaspoons soy sauce
12 raw king prawns
125 g green bean (trimmed, sliced)
3 tablespoons virgin olive oil
1 tablespoon fresh root ginger (finely shredded)
Cooking Instructions
Firstly peel prawns, leaving tail shells on. Make a small incision along spines. Remove black spinal cords from prawns. Cook snow peas in boiling water for one minute, drain and arrange on four plates. Heat the oil in a large frying pan, add prawns and ginger and cook gently for five minutes, turning them once. Add lime juice, lime peel and soy sauce, cook for one minute. Arrange the prawns on the green bean, later pour over dressing. Serve at once.
