| Potato Salad With Cumin Vinaigrette |
Ingredients
1 pound red potatoes (cooked and sliced)
5 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon cumin
1 large onion (thinly, red, sliced)
black olives
2 medium hard-boiled eggs (wedged)
parsley
pepper
salt
Cooking Instructions
In a serving bowl, whisk the olive oil with, cumin, pepper, salt and vinegar. Add potato and onion slices. Blend fine. Garnish with olives, parsley and eggs.
