| Chickpea Salad |
Ingredients
540 ml chickpeas (rinsed)
15 grape tomato halves
1/4 red onion (sliced)
100 gr feta cheese (cut into cubes)
12 black olives
Dressing:
50 ml extra virgin olive oil
1 garlic cloves (finely chopped)
2 tablespoons lemon juice
1 teaspoon cumin
1/2 teaspoon dry mint
1/2 teaspoon cayenne pepper
pepper
1 teaspoon salt
Cooking Instructions
Combine all the ingredients in a salad bowl. Whisk dressing ingredients and toss. Serve with main dish.
