Ingredients
2200 g potatoes (kennebecs)
peanut oil (for frying)
kosher or sea salt
Cooking Instructions
First scrub the potatoes and cut them lengthwise. Soak them in water to remove excess starch, and dry them. Just before serving, heat the oil to 190 C and fry the potatoes in small batches until golden brown and crispy, almost three minutes. Drain them on a cookie sheet and sprinkle with salt. Thicker fries should be fried twice; fry them firstly at 160 C, for five to eight minutes, remove them and drain them, and later fry them again at 190 C until the desired color and crispness are reached. Enjoy.
