| Apple Pancakes |
Ingredients
2/3 glass flour (unbleached, unsifted)
2 teaspoons sugar
1/4 teaspoons salt
4 eggs (large, beaten)
1/2 glass milk
2 glasses apple slices
3/4 glass butter
1/8 glass sugar
1/4 teaspoon cinnamon
Cooking Instructions
First sift together the flour, two teaspoons sugar and the salt. Beat eggs and milk together. Gradually add flour mixture, beat until smooth. Saute apples in 1/4 glass of butter until tender. Blend two tablespoons sugar and the cinnamon together. Toss with apples Melt two tablespoons butter in a six inch diameter deep fry pan. Pour in the batter to a depth of a almost 1/4 inch. when set place 1/4 of the apples on top, cover with more batter. Fry pancake until lightly brown on both sides. Keep warm and repeat procedure until all batter and apples are used up. Enjoy.
