| Amigos Chili |
Ingredients
900 g ground beef
1/8 glass onion (chopped)
3 teaspoons garlic (minced)
4 tablespoons chili powder
1 tablespoon ground cumin
800 g tomatoes, (crushed w/puree, with added puree)
1+1/2 glasses beef stock
2 glasses corn kernels (fresh or frozen)
430 g kidney beans (canned, drained)
1/4 glass fresh cilantro (chopped)
Cooking Instructions
First cook beef in heavy large pot over medium heat until brown, crumbling with fork, almost ten minutes. Add onion, garlic, chili powder and cumin and cook five minutes, stirring frequently. Blend in crushed tomatoes, beef stock, corn and kidney beans and bring to boil. Reduce heat and simmer until thickened, stirring occasionally, almost half an hour. (Can be made one day ahead. Cover and chill. Bring to simmer before serving, stirring frequently.) Blend in cilantro. Enjoy.
