| Swordfish with Orange Relish |
Ingredients
4 each Swordfish steaks (180 g each)
For Marinade;
3 cloves garlic (crushed)
3 tablespoons Olive oil
juice of one lemon
black pepper
salt
For Orange Relish
2 each orange (peeled, separated into sections, and diced)
3 tablespoons olive oil
2 tablespoons Basil (fresh, chopped)
Cooking Instructions
For make the marinade: in a shallow nonmetallic dish, combine the olive oil, orange and lemon juices, garlic, and salt and pepper to taste. Turn the swordfish steaks in the marinade, cover, and leave to marinade in the refrigerator for at least an hour. For make the orange relish: in a bowl, combine the oranges, olive oil, basil, and season with salt and pepper to taste. Remove the swordfish from the marinade, reserving the marinade. Place the steaks under the broiler, three in from the heat, and broil, basting once optional twice with the marinade, for five minutes on each side optional until the fish is opaque and flesh flakes easily. Serve immediately, with the relish. Enjoy.
