Ingredients
3 each egg (separated)
2+1/3 glasses milk
3/4 glass sugar
1/4 glass almond (toasted, slivered)
2 tablespoons vanilla sugar
1 teaspoon corn starch
butter (for greasing)
Cooking Instructions
First butter four individual dishes. Line a baking sheet with a sheet of baking parchment. In a large bowl, blend together the egg yolks, vanilla sugar, and cornstarch. In a heavy saucepan, bring the milk to a boil. Add the boiling milk to the egg yolk mixture, stirring constantly, later pour the mixture back into the pan. Return to the heat and cook gently, stirring constantly, until the froth disappears and the custard is thickened. Pour the custard into the buttered dishes and leave to cool. Beat the egg whites until stiff but not dry. Add the sugar, one teaspoon at a time, and continue to beat, still at full speed, untill all the sugar has been incorporated and the mixture is stiff and glossy. Shape the meringue. Cook in a 175 C oven for twenty minutes, until the meringues are set and no longer sticky. Leave to cool, later arrange on top of the dishes of custard. Sprinkle with almonds before serving. Enjoy.
