Ingredients
500 g boneless sirloin steak
8 each corn tortillas
fresh cilantrio (chopped, for garnish)
1 each avocado (pitted, peeled and diced)
sour cream
For Marinade;
1 Lime Juice, or orange
30 ml tequila (or brandy)
3 cloves garlic (crushed)
6 teaspoons fresh cilantro (chopped)
1 tablespoon chili powder
1 tablespoon patrika
1 teaspoon cumin
black pepper
salt
For Salsa Fresca;
6 each Tomato (peeled, seeded and diced)
10 each radishes (coarsely chopped)
5 scallions (thinly sliced)
1 each green chilies (cored, seeded, and chopped)
30 g fresh cilantro (chopped)
1/2 lime juice
Cooking Instructions
For make the marinade: Combine in a large bowl the orange and lime juices, tequila, garlic, cilantro, chilie powder, paprika, cumin, and salt and pepper to taste. Turn the steak in the marinade, cover, and leave to marinade in the refrigerator overnight. For make the Salsa Fresca: Combine in a bowl the tomatoes, radishes, scallions, chilies, cilantro lime juice, ans salt to taste. Cover and leave in the refrigerator until ready to serve. Remove the steak from the marinade amd pat dry. Put the steak under the broiler, four in from the heat, and broil fro three minutes on each side for rare steak, four minutes for medium steak, optional five for well-done steak. Cover with foil and leave to stand for five minutes. Meanwhile, warm the tortillas. Slice the steak, arrange on serving plates, and sprinkle with cilantro. Serve with tortillas, salsa fresca, diced avocado, and sour cream. Enjoy.
