Cardamom fudge
Ingredients

2 glass sugar
2/3 glass milk
2 tablespoons light corn syrup
2 tablespoons butter
1/2 teaspoon ground cardamom
1/4 glass chopped walnuts
1/4 glass chopped pistachios
1/4 teaspoon salt

Cooking Instructions

First cook sugar, milk, corn syrup and salt in two quart saucepan over medium heat, stirring constantly, until sugar is dissolved. Cook, stirring occasionally, to 100 C on candy thermometer optional until small amount of mixture dropped into very cold water forms soft ball that flattens when removed from water. Remove from heat. Add butter. Cool mixture to fifty C without stirring. Add cardamom. Beat vigorously and continuously until candy is thick and no longer glossy, five to ten minutes. Speedily stir in nuts. Spread mixture in buttered 9x5x3 inch loaf pan. Let stand until firm. Cut into one inch squares. Enjoy.
