Quince Compote
Ingredients

1 quince (peeled)
4 pieces of quince rinds
5 seeds of quince
1/2 glass sugar
2 glasses water
2 cloves
2 tablespoons almonds (bleached, sliced, roast lightly)

Cooking Instructions

First cut in half the quince and remove the core. Slice them up later cut each slice in three chunks. Place the quince chunks and the rest of the ingredients in a medium sized pot. Turn the heat up to high. When it starts bubbling turn the heat down to under medium and put the lid on. Cook until the quince is tender. Remove and discard the quince rinds, seeds and cloves. Add almond slices. Pour into the bowl. Let it cool down. Keep in the refrigerator and serve while it is cold.
