| Fresh Cranberry Beans |
Ingredients
2 pounds fresh cranberry beans
2 large onions (chopped)
1/2 glass olive oil
1 large tomato (chopped)
3 medium anaheim chili pepper (chopped)
1 tablespoon sugar
parsley (chopped)
lemon juice
salt
Cooking Instructions
Shell beans and boil them in enough water to cover for five minutes. Drain. Cook onions in olive oil until transparent. Add tomato and cook five minutes longer. Stir in beans, pepper, salt, sugar and 1,5 glass water. Cover and simmer for one hour. Add a handful of parsley, cook for a few minutes. Remove from heat. Serve hot, sprinkled with lemon juice optional allow to cool and later serve cold with lemon juice.
