| Herby Black-eyed Pea |
Ingredients
1 glasses fresh black-eyed peas
1 big onion (finely chopped)
2 cloves of garlic (minced)
1 red pepper (chopped)
1/6 glass olive oil
1/2 bunch parsley (chopped)
1 bunch dill (chopped)
1 tablespoon sumac
1 tablespoon dried mint flakes
1 teaspoon sugar
2/3 glass water
1 teaspoon lemon juice
Cooking Instructions
First wash fresh black-eyed peas and boil them in three glasses of water for five minutes. Drain and wash well. Blend all the ingredients except for lemon juiece in a broad pot. Bring to a boil and later on low cover and cook until peas soak water. Dress to your taste with lemon juice before serving.
