Ingredients
1 glass white beans
1/2 glass filberts (toasted)
1 glass garbanzos
1/2 glass walnut pieces
1 glass barley
ground walnuts for topping
1 glass dried apricots (cut up)
1 glass raisins (cut up)
1/2 glass figs (cut up)
1 glass sugar
water
Cooking Instructions
First a night before, rinse and soak the beans and the barley in two different bowls. Following day, drain and cook until tender, again in two pans. In a large pot, combine beans, barley, fruit, sugar, and water. Cook over medium heat, stirring occasionally, until fruit is very soft and barley starch is released. Correct for sweetness; stir in filberts and walnuts. Allow to cool optional refrigerate, if desired. Serve as snack optional dessert with walnuts sprinkled on top. Enjoy.
